Zarza Coffee is a brand created in the Colombian mountain range at 1500 MSL, the project refers to the association of the “Gasca” family and the Zarzal, a bush from Zarzamora that represents strength and family union. Zarza Coffee features not only the hard labor in trading coffee but also good practices in growing trees and in every step of the production, from transformation to tasting. They combine coffee production with other natural processes such as beekeeping that generates a great value to the product.
For years Finca Bella Vista has been a witness of the great coffee production of this gifted land. It differentiates itself by growing several coffee varieties that take the most of this terroir and an excellent cup profile making it so singular.
In addition, Gasca is one of the families from Huila that has been keeping their knowledge for the past four generations.
STEP 1. COLLECTION AND MANUAL SELECTION OF MATURE GRAIN.
STEP 2. DRY PULPE AND OXIDATION IN PLASTIC BAGS FOR 24H
STEP 3. SUBMERGED FERMENTATION FOR 60H AT MONITORED TEMPERATURE BETWEEN 30 AND 33 DEGREES.
STEP 4. THE CHERRIES ARE WASHED TO REMOVE MUCILAGE AND IMPURITIES.
STEP 5. DRYING IN MARQUESINAS FROM FIVE TO 12 DAYS DEPENDING ON WEATHER CHANGES AND IN A TEMPERATURE THAT DOES NOT EXCEED 33 DEGREES.
