At 33 years old, Rigo Chavarro is injecting new energy into the family coffee legacy. While the previous generation tended to prioritize high volumes of commercial coffee, he opts to cultivate smaller quantities with superior quality, embodying his motto: less is more.
Rigo owns two plots of land, each just 1/2 hectare, perched between 1800 and 1900 masl, and they are exclusively planted with 100% pink bourbon.
Since he started farming his own plots 12 years ago, Rigo first experimented with Caturra and then Tabi, two varietals that can produce interesting cup qualities but proved too susceptible to changing weather patterns.
Climate changes rapidly at this altitude: 30 years ago, it was impossible to grow coffee at such a height because it was too cold. Nowadays, you can grow coffee, but some varietals are starting to show high susceptibility to either drought or heavy rains. This is becoming an additional challenge for producers who sometimes have to switch varietals regularly.
