This coffee is from a group of producers whose cooperative is based in La Plata, a town in North Huila where you can find, in addition to great coffee, fresh tamales in the central market place. Tamales is a traditional colombian dish that consist in wrapping corn dough, meat and vegetables in a leaf and cook it in boiling water. In La Plata, the leaf often used for tamales is the Bijao, which gave its name to this regional blend. This cooking method has been used in Colombia since pre-hispanic times.
Bijao coffee comes from farms situated in municipalities of north Huila.
The Huila department is widely recognized both in Colombia and internationally as the country’s largest coffee producer by volume, while also being known for cultivating a significant amount of specialty-grade coffee, typically grown on small farms averaging 3-4 hectares.
